Place a medium saucepan over medium heat and add the oil. Bring to temperature. Add the mustard seeds, spices and curry leaves to the hot oil and allow to temper for 30 seconds. Add the onion and garlic and fry for two minutes. Do not allow the garlic to burn.
Cook for a further minute before adding the chopped tomatoes. If using fresh tomatoes, add a splash of water here too. Cover the pan with a tight fitting lid and leave to simmer for 5 minutes.

Seriously stfu
Good start to learning how to make a Dal, with some good tips, but did not work well when I changed the recipe for more people. It lacked flavour and I had to add so much more spice, the cooking time was at least 3 times as long as suggested, there was way too much water and the lentils were cooked before it had all evaporated. I wanted to make it for 10 people, it made enough for about 16, which completely overfilled my pans and made the experience much more stressful.
I love this recipe! Easy with loads of flavour. It’s my go to whenever I’m craving a dhal!
