Chef's Notes

1. You may also use chopped chicken pieces with skin on and bone in. Increase the cooking time accordingly. 
2. To rehydrate wood ear mushrooms, soak them in plenty of cold water for 2 hours until plump. Alternatively, use hot water to reduce the time to 20 minutes.

Made this today. Very simple to make and came out yummy. I had breast so the meat was a little dry when cooked. Also i had black mushrooms - are they same/similar to woodear mushrooms? Seem a little harder(not as velvety).

Made this last night and served it with your bao buns (which i had frozen a few weeks ago). Delicious!! One Q, if i wanted more sauce, should i just double the liquids in the recipe (the sauces plus the stock) or would i also have to up the ginger and garlic accordingly?

I have rated this recipe highly before, having followed your exact instructions. This time I left the thigh bones in and increased cooking time. I didn't have woodear mushrooms but the dried mixed mushrooms I had filled the bill. I'm getting quite good at deseeding red chillies to leave enough seeds for our needs ;-)
