• 1 small yellow onion, diced (about 1 cup)
• 1 small green bell pepper, diced (about 1 cup)
• 1 tablespoon Diamond Crystal kosher salt, plus more to taste
• 1 teaspoon ground black pepper, plus more to taste
• 1 recipe day-old cornbread, crumbled
• 2 cups unsalted chicken stock, plus more as needed
