Let the tofu marinate for at least an hour to soak up the flavor.
Keep the feta in the fridge in a sealed container for up to 3 days.
For a tangier feta double the apple cider vinegar and lemon juice.

Easy and delicious. I don't have a tofu press, so I cut the block in half, wrapped it in a dish towel, placed it between two plates, and put a heavy tea kettle on it. I used a 14-oz block of extra-firm tofu from the supermarket. An 8" by 8" glass baking dish was the perfect size for marinating the tofu because it let the marinade surround it completely.
