Grapefruit Tart

Ingredients

• 1/4 tsp salt
• 2 egg yolks
• 1 egg yolk
• 2 tbsp fresh lemon juice
• 1 1/2 cup all-purpose flour
• 1 cup granulated sugar
• 3 whole eggs
• 3/4 cup heavy whipping cream (chilled)
• 1/2 cup confectioner's sugar
• 1 splash vanilla extract
• 4 tbsp unsalted butter (diced and softened)
• 6 tbsp fresh grapefruit juice
• par baked tart shell
• 9 tbsp unsalted butter (diced and chilled)
• 1 to 2 tbsp ice cold water
• 1 to 2 tbsp granulated sugar
