  1. Preheat the oven to 350°F. Line a 9 X 12-inch baking pan with parchment paper and set aside.

  2. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. Using an electric mixer, beat the butter and sugar together on medium speed until creamed together and fluffy. Next, add the oil and mix further until pale and aerated, another minute or two. Stop the mixer and scrape down the sides of the bowl.

Sounds delicious! Save the leftover cake pieces (freeze until you have enough from a second time making these mini cakes, if necessary), fold together some whipped cream, any flavor of pudding, then fold in the cake pieces: nice secondary dessert!
