The recipe is enough to make the bars in a 1/4 sheet pan (9"x13") , however we know for most, blood oranges can be a bit expensive so a reduced recipe may be a better option. The recipe works perfect to halve it and make the bars in a 4"x14" tart pan (that is what was used in the photos) or made into individual tarts in 3" or 4" pans. Or you can always substitute in some tangerine juice for the blood orange juice. The color will pale more towards the orange side, but it will still be delicious. Promise. Also, make sure to taste the sweetness of the curd as you are making it. Blood oranges can vary quite a bit on their sweetness, so adjust the sugar quantities to your desired taste.

These are not really a traditional cinnamon-sugar snickerdoodle, theses cookies are non the less exquisite and the lover of one will love the other.Be careful measuring out the saffron threads, as they can easily pass the fine line between perfect and too much. These make a large cookie in order to create the perfect balance between the edge crispness and center softness. One can always make them smaller, just adjust baking times as needed and be aware it may affect the texture.

These simple, sweet bars may be made either gluten-free or with regular graham cracker crumbs. In my experience gluten-free graham cracker crumbs absorb butter differently than gluten crumbs. I have found using 2 cups per 1/2 cup melted butter produces the best gluten-free result. If making this with gluten, 1 1/2 cups crumbs should be just right. Bars can be cut into any size. Due to their sweetness I prefer 1-inch by 1-inch bars. You can always eat more than 1! They can be stored in the refrigerator or at room temperature. For a firmer consistency keep them chilled.

Recipe adapted from Julia Child's Mastering the Art of French Cooking. We used dark chocolate because we love it, but the recipe works fine with milk chocolate as well. In the recipe we used orange bitters, which any cocktail making household hopefully has, but in case you don't feel free to use an orange liqueur instead of the bitters and brandy. And if you don't have an espresso maker, use a strong coffee instead. The recipe is quite easy, but it does require a bit of hand whipping to develop the mousse's desired fluffiness. Great for an arm workout or it may also be good time to bust out the hand mixer.
