  2. Add wet ingredients to dry ingredients: carrots, eggs, coconut milk, coconut oil, and raisins. Mix thoroughly.

I am paleo ketogenic and have been craving carrot cake like mad!
I added 1/4 cup of golden no sugar added raisins and a small handful of california almonds ... spooned the batter into my sandwich maker and made delicious triangle shaped mini cakes! Thanks for the recipe!
