Found this recipe today and made it tonight. It's very basic and simple. I can see it taking me in many different directions, depending on the mood and what's on hand to add. Dried cranberries would probably work well in it. Cheese is another possibility since we're not totally non-dairy. Pine nuts come to mind, too. Thanks! We enjoyed it!

I made this recipe last night and i added some marinara sauce to the mixture and put some extra sauce on top along with some shredded rice cheese. Now I have some left for lunches and one in the freezer. Thanks for sharing!

I just made this recipe last night and it was incredibly easy and delicious. I halfed the recipe and made two changes - added green jalapeno pepper sauce and as others have mentioned, red pepper powder. I served it with a salad. Great mid week meal that didn't take much time at all. Thanks for the great recipe! I really enjoy your blog and creations.

I tried this last night. I used ground turkey instead of chicken. My oldest had a second helping and said "Mom, this is really good." My youngest also liked it and followed up the following morning with "Mom, I really liked that meatloaf last night." How often does this happen???
