This salad (without the Greek Vinaigrette) will keep for up to 4 days when stored in an air-tight container. When ready to eat pour the dressing over and toss before serving.

I have made this so many times! It is amazing! BUT….I noticed the first day it tastes perfect but the next days not so much. What I realized is that since I made the dressing on the side to keep stored separate so the lettuce doesn’t get soggy….its the dressing that becomes too pungent sitting marinating for days. So in the future I will make the dressing for each serving those later days. It is so fresh its a great summer salad and pairs well with Gabys Greek chicken and potato recipe!
Good but I missed the kalamata olives.
I was thinking how will this be w/o black olives. Let me tell you .. you don’t need them. This was absolutely yummy. The herbs made it. A keeper recipe ❤️
Delicious! I love a chopped salad - easy to serve and easy to eat. I omitted onion because my family is not a fan. The cucumbers add a nice crunch and the dressing is light and tart. I also add a little dried oregano to it for more herby flavor.
