  1. Thoroughly scrub and dry lemons, then peel rind with a peeler, ensuring as little white pith as possible remains on rinds. Place peels in a large sealable jug or mason jar. Discard or reuse lemon fruit.

  2. Pour Everclear into jar, making sure lemon peels are fully submerged. Secure lid tightly.

  3. Place jar in dark place and let sit for 2–4 weeks. Swish jar every day or so to redistribute peels.

  4. In large saucepan over medium heat, add water and sugar. Stir constantly until sugar dissolves and liquid turns clear.

  5. Let sugar water cool to room temperature.

Storage Instructions
Store limoncello in a sealed bottle or jar in the refrigerator for up to 3-6 months. Refrigeration is optional but recommended.
Freezing Instructions

Pour limoncello into a freezer-safe airtight bottle.
Freeze for up to 6-12 months for long-term storage. Due to the alcohol content, it will not freeze solid but will thicken slightly.

Limoncello can be served directly from the freezer (slightly thick consistency) or brought to a chilled temperature in the refrigerator overnight.
