These Stuffed Chocolate Covered Dates require only 4 ingredients for a sticky-but-sweet no bake dessert recipe. Swap out the nut butter for any flavor you prefer and go crazy with the toppings. Vegan and Paleo, too!

Recipe Medool Dates – Medjool dates will give you a caramel-y, soft and flavorful center.
Nut Butter / Seed Butter – cashew, peanut, almond, sunflower seed, etc.
Chocolate chips – Lily’s for low sugar/paleo or Enjoy Life for vegan friendly, or another favorite brand.
STORAGE – Stuffed dates will keep in an airtight container in the fridge for up to 1 week.

Love these!!! Just made them for Thanksgiving tomorrow & everyone (taste testers) loved them so far. Used crunchy peanut butter with sea salt and creamy peanut butter with crushed peanuts, amazing! Made 50. Will definitely use these for more events. Already shared the recipe (link here) with four people that asked.
Do yourself a favor and just make a batch of 20. I kept them on the counter for a snack/dessert throughout the week. SO GOOD!
