Storing: Fruit flans are best served immediately or within a few hours of making them up. Store them in the fridge until you're ready to serve. You can store them in an airtight container in the fridge for up to a day or two, but after several hours the cases will start to soften. There's also the option of making the shells several days ahead and storing in an airtight container until you're ready to make them up and serve. This way, the shells should stay crisp.
