Traditional Eggs Benedict with Hollandaise Sauce

Ingredients

• 1/2 teaspoon dijon mustard
• 3 egg yolks
• pinch sea salt
• pepper
• 1/2 cup melted butter
• 1 tablespoon white vinegar
• 1 tablespoon lemon juice
• 4 slices Canadian Bacon
• 2 eggs (poached)
• small pinch red pepper flakes
• 1 tablespoon chives (chopped)
• 1 english muffin (sliced in two and toasted)
• avocado slices (or avocado mash (optional))
