What is smooth ricotta?
Smooth ricotta has the whey blended back into the ricotta. This creates smooth, creamy ricotta. You will find smooth ricotta easily in the supermarket.
Can I use fresh, drained ricotta in this recipe?
Fresh, drained ricotta can be used in this recipe instead of the smooth ricotta. Simply mix a few tablespoons of milk into drained ricotta to create a smooth texture.

Delicious! I no longer had the whey nor did I have milk. I used 1/2 & 1/2 to smooth the ricotta and it did the job.
Can I reheat this later. ?Is it still excellent then?
How delicious and ideal for entertaining is this? I am so excited to try it! Pinned :)
Wow this looks fabulous Marcellina! I love the idea of serving it with the roasted tomatoes. It sounds like it is the perfect pairing. Yum, I can't wait to try it.
