Instructions

  1. Place water and salt in a large bowl and stir.

  2. Place chicken breast between folded parchment paper and pound with a rolling pin until uniformly thick.

  3. Place breasts in salt water for 30 minutes.

  4. Remove breasts, pat dry with paper towels.

  5. Brush with olive oil and season with salt and pepper.

  6. Heat grill on high (about 425 degrees)

  7. Place breasts on grill, close lid and cook till nice golden grill marks are established (3-4 minutes)

I finally found a recipe for juicy and tender boneless skinless chicken breast. I made the brined chicken tonight for dinner and grilled it on my indoor smokeless grill. I did have to cook the chicken a few minutes longer on each side then the recipe called for but it was delicious.

I have tried many things to get TENDER grilled chicken breasts but this works every time. I sprinkle a bit more spices over the meat before grilling just to amp up the flavour. I know my S-I-L rinses off the brine before grilling to cut down on the salt content but it's not a problem for me. Thanks so much for posting especially with the grilling instructions (temp/time).
