Preheat oven to 350F. Grease and flour three 6" cake rounds and line with parchment. In a medium bowl, whisk flour, baking powder, and salt until well combined. Set aside. Using a stand mixer fitted with a paddle attachment, cream butter, orange zest, and sugar on med-high until pale and fluffy (approx 3mins). Reduce speed and add eggs one at a time fully incorporating after each addition. Add vanilla. Alternate adding flour mixture and sangria, beginning and ending with flour (3 additions of flour and 2 of sangria). Fully incorporating after each addition. Add fuschia color gel until desired color is reached. I added about 4 squirts. Bake for 30-35mins or until a toothpick inserted into the center comes out mostly clean. Place cakes on wire rack to cool for 10mins then turn out onto wire rack.

Notes* Ensure there is NO trace of egg yolks in your whites and that your mixer bowl and whisk is completely grease free or your meringue won’t stiffen. ** The buttercream may look like it’s curdled at some point. Keep mixing until it is completely smooth.

The cake was really good. I used two 8’ pans instead of three 6’. I also made a berry jam (I mixed blueberries, cranberries and blackberries with sugar, some lemon juice and 1/4 cup of red wine (Malbec, was the only wine I had open).. I spread this between the layer and added some fruit. Now, I am giving a 4 stars because I had trouble with the icing. I don’t l le of I had the same issue the OP had. But my Icing was too runny. I don’t know if I added too much liquid (coloring) trying to achieve the rich color I saw on the pictures. Anyways, I tried to re-whipped, i even wait over night, but it didn’t work. So, I ended up whipping some cream-cheese buttercream and used it to decorate the cake. All in all, I would definitely do it again. Thanks for the recipe!
