This is a really good way to prepare red beef. I use this for rolled tacos. The red beef is juicy and the flavor is delicious.

Thanks for sharing! I'm Mexican and can say this is exactly how we prepare this dish (but stove top). Never thought of making it in the crock pot!! The only thing I do different is I don't add the water in which the chilies were cooking, I add fresh water to make the sauce. :)
