It is important for the cookies to be as close to 1/8 to 1/4” thick as possible.
The cookies are not overly sweet, however, the icing is very sweet. When paired together, there is a nice balance.
Let the cookies cool completely before adding the icing.
Use any food coloring for the icing.

I am going to use royal icing. I know it's not sugar free🥰
Delicious! I didn’t use Truvia brand because I didn’t have it (I used Whole Earth) and I switched out the almond extract for additional vanilla extract on a 1:1 ratio (again, out of necessity since I didn’t have it). Subs aside, these cookies are so delicious and set so nicely! They are absolutely perfect for a kid’s cookie decorating party without the sugar overload!
Great cookies but i need to know how many cookies i can eat in one sitting. My brother in law is diabetic and he likes it when i give his wife new recipes to use.
