Japchae is a simple Korean noodle dish packed with a rainbow of vegetables and accented with a hit of flank steak. Japchae is made with Korean potato starch glass noodles, which are surprisingly light and gluten-free!

Mix the beef together with 1 clove of the garlic, 1 teaspoon sugar, ¼ teaspoon ground black pepper, 1 tablespoon soy sauce, and 1 teaspoon of sesame oil.
Prepare the vegetables, and set aside. Cook the noodles for 7 minutes in a large pot of boiling water. Strain and cut with scissors so that they’re a little shorter. Add 1 tablespoon sesame oil, 1 tablespoon soy sauce, and 2 teaspoons sugar to the noodles. Toss thoroughly.

I made this almost exactly as written. The only differences: I had 9 oz. of flank steak, rather than 6, and my 1.5 lb. package of noodles was divided into 3 bundles, of which I used one (= 8 oz., rather than 10). But there didn't seem to me to be too much beef or too few noodles. It was delicious, and got a rave review from the spouse for whom I cooked it (who doesn't ordinarily like glass noodles). Amazing receipe!
This is such a good recipe! I'm fortunate to have a giant Korean supermarket nearby, so I can buy spicy marinated ribeye.
I like sweet potato noodles, but I know not so many recipes with it. So I decided to check maybe The Woks Of Life can offer me something:) At first, when I read the recipe, I decided what I am too lazy to do it :D But I bought some vegetables and shiitake, and made this dish. Absolutely no regrets: it's soooo tasty. And I was always using only frozen or dried shiitake, now it turned out that fresh shiitake is incredible good.

I'm so glad I found your recipe for Korean glass noodles. I had a package of glass noodles that only had Korean instructions and I was not sure if the noodles were soaked or boiled!
