This recipe was definitely time consuming. We had great hopes I was disappointed in the results. The salsa did not turn orangey red but was a rather greenish brown. I followed the recipe as given. I believe if weights were indicated i.e. 8 plum tomatoes the flavor balance would be better. Due to the small amount of spice ratio to meat we did not get the benefit of the yummy spices. Please accept this as constructive criticism. I do enjoy your site and will continue to use the recipes

Great version Kaitlin, almost a picadillo stuffing but a few nice alternative twists. I use queso asadero in mine to make “ooozers”. Do you have a favorite Mexican cheese?

Hi team!

I love chiles rellenos and always order it at Mexican restaurants. The ones served in California seem to have cheese inside only. Can you advise what type of cheese to use for the cheese version and whether the cooking process is the same.
