Made this as written ... we all LOVED it! To make it easier and a true "dump" meal (because I'm that lazy) I used a frozen red and green pepper/onion combination. It worked out great. We can't wait for this to come back up in our recipe rotation. Thanks for a great meal!!
Loved this recipe! Made it during naptime, popped it in the fridge and cooked as directed at dinner time. The bell peppers still had a little crunch to them which was nice to mix up the textures. Was definitely skeptical putting it in the oven, it does not seem appetizing while you’re cooking it but ends up really good so just push through! Next time I’ll make sure to have some tortilla chips on hand
