Instructions

  1. Boil husked corn in water until cooked. Remove and let cool.

  2. One at a time, stand each husk upright on a cutting board and cut downwards, removing all of the kernels.

So easy and delicious! Lends itself well to minor substitutions (feta cheese, kids hate cilantro, etc). I also skipped the boil and placed the raw kernels directly into the hot skillet. The best Esquites recipe I have found!
