This was a terrific way to use up leftover roast chicken. So easy, and all ingredients are usually at hand, so no extra shopping trips! I’m the only soup lover in the house, so this will be my lunch for the rest of this snowy week. Thank you for sharing.
Bought some rotisserie chickens at Sam’s Club, today, and was looking for a Keto recipe to use one. Found your site through Pinterest and so glad I did! I doubled the recipe (husband needs lunches!) and added in some green chilies, cumin and chili powder. The original recipe is good like it is and if you want to spice it up it makes a great base to start adding in your favorite chili ingredients! So good!
