Instructions

  1. Put the chocolate and butter into a heatproof bowl set over a pot of simmering water and melt them both, slowly.

  2. When the mixture is smooth, take the bowl off the heat and whisk in the double cream and Baileys.

  3. Put a plastic wrap over the bowl and put it in the fridge, leave there for 2 hours or longer.

  4. Melt your chocolate for the dip the same way you melted the mixture for the truffles in a double boiler.

I made the balls and put them in the freezer before dipping them. That helped to firm them up. Then I put them back into the freezer after dipping and we served them right out of the freezer...oh so yummy!

These are simply AMAZING! I have made these several times for both gift baskets and for a bake sale that benefited rescue animals. This is my go to recipe and I'm never disappointed. I wish I could add the pictures I took of my boxed Baileys truffles.
