Instructions

  1. In a small skillet over medium heat, cook the okra for about 5 minutes, until any slime cooks away.

  2. Heat the oil in a large dutch oven over medium heat. Add the bell peppers, onions, and celery. Saute for 5-8 minutes, until the vegetables are soft.

  3. Add the sliced sausage. Saute for about 5 minutes, until browned.

  4. Make a well in the center and add the minced garlic. Let it sizzle for about 30 seconds, until fragrant, then stir in with everything else.

  5. Add the chicken broth, diced tomatoes, and sauteed okra. Season with cajun seasoning and sea salt to taste.

  6. Bring the gumbo to a boil, then cover and simmer for 30 minutes.

Absolutely the best! I've cooked it multiple times. Made with chicken and sausage and just as good with shrimp. I don't put the thickening in it.

I'm a dark roux gumbo type, but my husband can't stand all the extra flour and oil. This was such a hit with him, in a way that my regular gumbo isn't. I miss the flavor of the roux, but this is much, much healthier and delicious as well.

Delicious and easy! It didn't want to thicken at all, so I added 1/2 tsp organic xanthan gum at the tail end. I made some other minor adjustments for my specific keto diet that does not include onions (I used spring onions instead) or tomatoes, and used 4 colors of bell pepper, as I already had them on hand in the freezer. Thank you!!!

This is the 2nd time I've made this and I LOVE this recipe! To me it tastes so much like a classic gumbo -- minus the roux, but the file powder really thickens the stew up and you don't miss it. I also added organic kale the second time around. There are a lot of adjustments you can make to suit your tastebuds, but this is a great recipe!
