  1. Preheat oven to 350 degrees F. Place the pie shell on a baking sheet; set aside.

  2. Add the sugar, maple syrup, and butter to a small saucepan; bring to a simmer until the sugar dissolves. Remove from heat and set aside to cool to room temperature.

  3. In a large bowl, whisk together the eggs, lemon juice, vanilla, and salt. Stir in the cooled syrup mixture, then the nuts.

  4. Pour the nut filling into the pie shell.

  5. Bake until the crust is golden and the filling is set, about 1 hour. (If topping or crust begins to brown too quickly, cover with a crust protector.)

Great tasting pie though the 'custard' was not gelled. Maybe the sugar not completely melted? Not enough corn starch? Nuts too oily (Planter's lightly salted mixed nuts that I toasted)? It tasted so good so I'm not giving up. Any suggestions?

I loved this pie. I know it will sounds crazy but as much as I love peanut butter, I don't actually like peanuts. This works with any type of nuts.
