Tips:1- may be called 'rolled oats' 'old fashioned oats' or 'large flake oats'. Do not use quick oats or steel cut oats.
2- the egg may be replaced with a flax egg for a vegan version.
3- maple syrup may be swapped for an equal volume of honey or brown sugar.
4- you may use any dairy or non-dairy milk including almond, oat, macadamia nut or soy milk.
Storage
store in an air tight container in the fridge for up to 4 days
freeze in a freezer bag (suck the air out using a straw), or wrapped in parchment paper in a meal prep container, for up to 1 month

The blueberry version has become my go to breakfast. A couple of tweaks I’ve made.
Add 1/4 cup of almond butter. Helps bind and moisten the muffin.
1 tsp of greater lemon rind. Adds good flavor with the blueberries.
I love your Super Seed recipe! I have tried a few others but this my favorite. Yum.
Made the PBJ ones in mini muffins (silicone on a sheet pan-> mine were a good bake at 17 min and then needed to come out of the cups to dry—- it was a really wet dough)
Delicious recipe though! A scoop of raspberry lime jam on top was the perfect addition to this.
These are delicious! I love having a quick grab and go oatmeal option. — especially one that is fast, easy and a one bowl clean up. That comes in handy since my family loves them so much, they’re hard to keep in stock. Thank you Denise:)
