  1. Preheat oven to 350. Spray a 9-x13 inch pan with cooking spray, place parchment paper into the pan and spray the paper; and set aside.

  2. In a mixer, combine the butter and the sugar. Beat until blended. Beat in the eggs one at a time until blended.

  3. Mix in lemon juice and vanilla.

  4. In a small bowl, combine flour, baking soda and salt. Slowly add to butter mixture alternately with the buttermilk, beginning and ending with the flour mixture.

  5. Fold the peaches into batter and stir just until peaches are incorporated into the batter. The batter will be very thick. Spread batter into greased pan.

  6. Bake for 40-45 minutes or until a toothpick comes out clean. Let cake cool completely.

  7. Remove the cake, invert it onto a platter and remove the parchment paper.
