This salad looks weird, but it’s really good! I made it for Father’s Day and everyone loved it. I used spinach instead of arugula because my dad doesn’t like arugula.

This is really good! I used pluots instead of apricots and arugula sprouts instead of arugula. Such an interesting mixture of flavors -- a surprise in every bite! -- as well as a beautiful. I had never had Castelvetrano olives before and I'm hooked. I am not that big a fan of olives, but these have a very nice delicate taste and texture. I will definite make it again and take it to potlucks.

Made this again, along with (sorry, nonvegan) sponakopita. Excellent pairing! It made enough for two meals. Has anyone tried it with roasted pumpkin seeds? Next time they are going in there. Bet it will be great.

So refreshing and I love the summer flavours! I added chickpeas to make this a more filling main course and some pistachios for extra crunch. I also used nectarines instead of apricots, which turned out great :)

In LOVE!! I substituted mango for the stone fruit as it was seasonal here. Went perfectly. Used extra basil and mint and fresh lettuce from the garden. Will definitely make again!

So good! I was very skeptical of this salad because I am not really a fruit person (*gasp*) and I was anxious about swapping out my tomatoes, lettuce and celery for summer fruit. But wow! So tasty. We have been experiencing a heatwave in the UK this week and this salad has been absolutely perfect. And super easy to make too!
