Delicious! I used Country Crock plant based butter sticks and found that an extra 1 - 2 cups of 10x sugar (I didn't measure) was needed to get a 'peaking' icing texture as it is a bit thinner in consistency than most shortening. Super simple and very delicious!
I've been veganizing my own recipes for this year's birthday season (we have 7 kids with at least one birthday a month from now until December (aside from October)) and wanted to check mine off of what I could find on Pinterest.
