Sugar Cookie Fruit Pizzas (Chewy Version)
These are the perfect refreshing summer treat! Soft and chewy sugar cookies are topped with a rich cream cheese frosting then decorated with colorful fresh fruit. No one can resist these!

For the cookies: Preheat oven to 350 degrees. In a mixing bowl whisk together flour, baking soda, salt and cream of tartar for 20 seconds, set aside.
In the bowl of an electric stand mixer fitted with the paddle attachment, cream together sugar and butter until combined.
Mix in egg, then mix in egg yolk and vanilla extract. With mixer set on low speed slowly add in dry ingredients and mix just until combined (dough with will thick, stop mixer and mix by hand to get flour at bottom if needed).
Scoop dough out 1 1/2 Tbsp (about 33g) at a time and shape into balls. Transfer to a baking sheet lined with parchment paper or a silicone liner, spacing cookies 2-inches apart.

*If you don't want buy as many kinds of fruit as I did I'd recommend using diced strawberries, blueberries and diced kiwi.

Soooo soooo good!! I made this as a DIY dessert and let everyone decorate their own cookies. The kids LOVED it!! The cookies are seriously DELICIOUS on their own but over the top with the cream cheese frosting and fruit.

Just made the cookies so far but they taste amazing ! Looking forward to adding the frosting and fruit. How long will the cookies last before frosting/fruit added ? Thought it would be good to make the cookies in advance so I can just quickly add the frosting when needed but now wondering if that was a good idea!

Really delicious soft chewy cookies and the frosting was great and not too sweet. The fruit added to the top was so refreshing. I was really impressed with this recipe!!

I made these cookies twice and the first time they were perfect ! The second time the cookies spread out and cooled much flatter than before. Any advice as to why they turned out this way ? I can’t figure it out !

My only issue with these is I couldn't stop eating them! They turned out perfect!
This recipe is awesome! The cookies are soft every time! The frosting is the stuff dreams are made of, once you add in fruit it gives the illusion that you are doing something really healthy for yourself! You can’t convince me I’m not. Come on oxytocin! All the good feels with this recipe!

Thank you Jaclyn, these were deI licious! I omitted butter in the topping and still had plenty of it. Your tip about assembling them close to serving yielded a nice cookie texture and fresh looking fruit.
I highly recommend these cookies! Made them for a party and everyone loved them!
