  1. In a medium-sized pot, heat 2 tbsp coconut oil. Add the diced onion and fry until golden brown. Add minced ginger and garlic, and sauté until fragrant.

  2. Add lentils, green chillies, curry leaves, turmeric powder, cumin powder, coriander powder, salt, and black pepper. Stir well.

  3. Add water, bring the mixture to a boil, then reduce heat to medium. Allow it to simmer for 30 minutes.

  4. Stir in the coconut cream and simmer for an additional 5 to 10 minutes.
