Room temperature ingredients: it’s important your ingredients are all at room temperature to ensure even incorporation into the batter.
Strawberries: you can use frozen strawberries, too. Thaw them first then blot or squeeze some of the liquid out of them before using. You will be pureeing them, but you want to start with halved pieces first instead of just blending whole strawberries.
Freeze-dried strawberries: freeze-dried strawberries are typically found in the dried fruit section of your grocery store. If you can’t find them there, check the aisle with bulk candy, if your grocery store has one.

i have searched high and low for strawberry cake and frosting that is not complicated or WET- this is IT! I made this with KA gluten free 1 to 1 for my GF friends, and the cupcakes were great, big hit! Would for sure make again. the real star here is the frosting. I like frosting, like a lot ( i am the corner cake person with ALL THE roses haha) so i did 1.5x the recipe and used a full bag of dried strawberries which was more than the recipe called for to really pump up the flavor. it was totally good before, but i wanted MORE strawberry. I could eat that with a spoon. its so good. taste like fresh berries, i mean DEVINE. I look forward to using this on basic yellow cakes etc as well when i dont want to mess with the berries in the cake batter. Found this site recently and so far have really enjoyed everything i have made ( with a little more frosting haha). so excited about this one!
This Strawberry Cupcake recipe was an absolute hit for our family. I made it 3 times in less than a month. My daughter absolutely loved it so much she requested two times for her birthday celebrations (her actual day and for her small birthday party). I am so happy I discovered this recipe! Will try other desserts.
