I recommend using ataulfo (also known as honey or Champagne) mangoes which don’t have as much pulp as other varieties and are a bit sweeter.
You can easily get away with using just the pineapple and mango if that’s all you have. The other ingredients enhance the flavor, but those two are the center of attention.
Once prepared, these popsicles will keep in the freezer for up to 3 months.

I used frozen mangos and pineapple and let them thaw a bit before blending. Turned out excellent - thanks for the recipe! I love to have a healthy and tasty option for frozen treats! My little guy loved them too.
I don’t have popsicle molds anymore, so made it as kind of Slushie in a ramekin to use with a spoon.

I made these and how wonderful they are! Instead of adding vanilla, I added vanilla flavored greek yogurt. I followed the rest of the recipe as written. We have a mango tree and grow pineapples so it is a fantastic way of using our bounty for a refreshing treat after our walks in the morning.
