Name: Cheesy Cauliflower Soup
Yield: 6, 6 -8 servings
Ingredients: 2 tablespoons olive oil; 3 cloves garlic (chopped); 1 teaspoon salt; 1 cup milk; 3 tablespoons butter; 2 cups water; 4 tablespoons flour; 1 teaspoon pepper; 1 large carrot (shredded); 2 heads cauliflower (broken into florets); 4 green onions (white part only, reserve greens for garnish); 1 stalk celery (sliced); 1 quart vegetable broth (32 ounces); ⅔ cup shredded cheddar cheese; Garnish with green onion (optional)

Very yummy.... I added more cheese and smashed about 1/3 of the cauliflower so the soup became creamer. Very good :)

Oh my goodness this soup was delicious I made it. My husband along with me had two bowls each it was so good. The only thing I did different was that I added a little more flour to make the soup thick and my husband suggested sprinkling pepper flakes, not to much in the soup. Thank you for another great recipe this is a keeper, I know I will be make more recipes to follow.
