Sticky Pomegranate Glazed Chicken & Herby Quinoa
Juicy, spiced chicken glazed with sweet-tangy pomegranate molasses. Paired with a fresh, herby quinoa salad.

Stir the Lebanese 7-spice and 1 tablespoon of olive oil together in a large bowl. Season with salt and pepper, then toss the chicken thighs through the marinade. Set aside to marinate.
Cook the quinoa following pack instructions. Once done, set aside to cool slightly.
Finely mince the parsley and coriander (stalks and all). Tip into a bowl with the quinoa and pomegranate seeds. Roughly crush the walnuts and add those in too. Stir through the olive oil, season with salt, and squeeze over the juice of the lemon. Give everything a good mix and adjust the seasoning to taste.

This was so tasty! I couldn’t find the pomegranate molasses in the store so I didn’t use it for my first batch but it still tasted great without. The textures of the food worked brilliantly.
Super quick to make! Amazing for meal prep
i cant read so i put the molasses and honey in the marinade from the get go - but it still turned out ok, though i would leave it to marinate overnight next time and also maybe learn how to read before reattempting.
