Mushroom Gnocchi Bake
A delicious, warming bake. Taleggio and mushrooms are the perfect partners for gnocchi.

Slice up your mushrooms. Add olive oil to a frying pan over a medium heat add the mushrooms and cook until golden. Finely chop the parsley.
Grate in your garlic, then add thyme leaves, half your chilli flakes and half of your parsley. Zest in the lemon and mix well.
Add the single cream. Allow it to bubble down then add your spinach. Pop a lid on the pan and allow the spinach to wilt.
Add gnocchi to a bowl and cover with boiling water. Leave for 5 minutes.
Back to your sauce. Once the spinach has wilted, add the juice of 1/2 your lemons.
Add a little of water from the gnocchi bowl to the sauce. Mix together. Drain the gnocchi and add to the sauce.
