Instructions

  1. Preheat oven to 400 degrees F. Spray an 8x8 square baking dish with non-stick spray. Set aside.

  2. In a small bowl, add the ground flax egg and water together to make a flax egg. In a separate bowl, combine apple cider vinegar and dairy free milk to make a vegan buttermilk.  Let both sit for 10 minutes. 

  3. In a large bowl, combine gluten free flour, cornmeal, baking powder, baking soda, and salt. Whisk together.

  4. In a separate bowl, whisk together the brown sugar and melted butter. Pour in maple syrup and whisk together again. Add the flax egg and slowly pour in the vegan buttermilk while whisking until combined.

This might be the best cornbread I've had in my life. My husband who is not vegan, not gluten free, and doesn't even generally like cornbread, gave it an 8/10. I was astonished. It gets a 12/10 from me. Easy to make, nice and moist, tastes just how I always wish cornbread would taste. De.Li.Ci.Ous. Thank you for the amazing recipe!
