Instant Pot Baked Potatoes
Pressure Cooker (Instant Pot) Baked Potatoes are far superior to any baked potato cooked in the oven or microwave. In just minutes, you'll have potatoes with a soft, moist creamy center and a dry, thin skin on the outside. You can even give them a rub in olive oil and salt and crisp them up in the oven if you want.

Pierce each of the 3 pound bag russet potatoes several times each with a fork.
Set trivet or rack into the pressure cooker. Add 1 cup water. Place potatoes on top of rack. Seal lid.
Set to high pressure and cook for 12-20 minutes depending on the size of your potato. I had small to medium sized organic russet potatoes from Trader Joe's and set my time to 12 minutes, but if they are medium to large size increase the time to 20 minutes.

There is another way to bake potatoes that we take advantage of during the winter. On cold days when the fireplace has been running all day we have a pretty good bank of hot coals available. We wrap the potatoes in a couple layers of foil and bury the packages in the hot coals. It is a bit of art, but somewhere between 60 and 75 minutes the potatoes will be done, depending upon the heat of the coals.
We rarely bake potatoes in the oven unless there is something else going on inside it, such as dressing or roasting a chicken. Uses no extra resources or time in the kitchen.
When making baked or mashed potatoes in the IP you can add flavoring such as slices of onions or garlic cloves in the water. It then flavors the potatoes naturally. You can even add a chicken, beef or vegetable bullion cubes to the water for a different flavor to the potatoes.

Love IP for potatoes-as a side or steamed for salad or other dishes as you mentioned. The texture is the best. Thanks for sharing. Not heating up the kitchen is a bonus. One of our favorite ways is topped with leftover chili, cheese, raw onions and sour cream on the side, sort of a 5-way without the pasta.
