Instructions

  1. Warm the large pot over medium heat. Add the olive oil and then add the onion and carrots. Stir and cook for about 10 minutes or until you see the vegetables lightly brown. You should also see a fond (brown layer) form on the bottom of the pot.

  2. Add the garlic, cumin, curry powder, and chives to the pot. Stir and cook for about two minutes or until you see that everything is mixed well.

  3. Add the tomatoes, stir, and let cook for about three more minutes.

Subbed vegetable broth for chicken broth and didn't add the tomatoes, but it was *absolutely delicious .* 10/10, I fully recommend. Full of flavor!

I have made soups like this in the past and I can tell this is a good recipe. I did add/alter ingredients and I used red lentils, but I like the way this one works. I'm going to try it. Looks good.
