Using your fingers, massage the thyme and zest into the sugar. The sugar crystals will "cut" your zest and thyme, releasing their oils. This will help maximize flavor.

Made this yesterday and I think I’ve eaten half of it already—I crave salty more than sweet so that’s really saying something. LOVE the thyme, really makes this next level. Mine didn’t look a beautiful as yours (ordered the loaf pan you used maybe that will help haha) but perfect texture and lemon flavor. I used to gift my homemade granola but plan to switch to this I’m sure it will be a huge hit. Thank you!!

I am really happy and pleasantly surprised by the texture and density. It's light. The hint of thyme gives it a unique twist. Not sure I needed to eat a piece, that's my story, at 12:15 am, but I had to cut it to see the inside. : ) Well that's my story and I am sticking to it! Love it! 고마워
