Chef's Notes

NotesSOAKED RUM CAKE: If you like your cake to be fully drenched in the rum sauce, while the cake is still warm in the bundt cake pan, you can use a toothpick or fork and poke holes into the cake. Then pour the sauce on top of cake and let the sauce soak into it completely.
MAKE AHEAD RUM SAUCE: If you want to make your sauce ahead of time, store it in the refrigerator and reheat it in the microwave in 30 second increments, stirring each time, until hot.

I tried this for the first time - it's for a New Year's Eve gathering. Loved the simplicity of this recipe and the fact that it makes for a beautiful bundt cake. I used Malibu rum and there's a delicious hint of coconut to the final product. I cut the sugar in half and omitted the rum sauce to cut down on the sweetness of this cake. I think this recipe is a keeper!

This is the third walnut rum cake recipe I have tried. My far, loved the ingredients, and directions. It baked beautifully! It is for my daughter’s birthday for tomorrow! I didn’t use all the sauce, will bring it on the side!
