I've been getting fennel in my CSA boxes for the past couple of years and at first I didn't know what to do with it. This recipe has been a staple in my repertoire in the early fall months when this baffling bulb appears once again. The quick pickle seems to mellow out the anise flavor of the fennel and brightens up a tuna melt in a very pleasant way. Thank you for helping me learn to enjoy fennel and make it a less intimidating ingredient! I plan to try the rest of your fennel recipes soon.
