Add garlic, ginger, curry powder, and red pepper flakes and cook until fragrant, about 2 minutes. Add the lentils and cook for about 1 minute more, stirring occasionally.

NotesI was somewhat skeptical of lentils as a kid – but mix it with coconut milk and curry and a TON of garlic and ginger and I could eat this every day.

I've tried every Chicken Tortilla Soup I have come across until I found yours. It is delicious and full of flavor! Love the kick it has. Sometimes I overuse the immersion blender to get a little creamier -- just because that's what I was feeling that day. No other reason. It's our go-to CTS! Of course, with LOTS of homemade tortilla chips.
