Season the chicken with 1/2 teaspoon salt, 1/2 teaspoon pepper, and Italian seasoning.
Heat a large, high-sided skillet with 1 tablespoon olive oil over medium high heat. Once hot, add the chicken. Let cook 2-3 minutes without moving to develop a sear.
Stir the chicken and cook 2-3 more minutes or until done (165˚F.) Remove the chicken from the skillet and set aside.

My husband loved this! I did make some changes but mostly followed your recipe. After cooking the veggies your way, I added some garlic, sauteed for a minute then added 1+ c chicken broth, 2 T sherry, and a big handful of orzo, then covered a cooked another 10 minutes (we like our veg a bit more cooked than it would have been). Thank you!
Tried this for the first time tonight and it was a winner! Served over jasmine rice. A great, healthy and quick weeknight meal.
