Creamy tomato soup is topped with crispy, cheesy baked mozzarella balls that turn this foodie classic into a melty, cheesy, bowl of YUM!

Instructions
Saute chopped onions, celery, and carrots in 2 TBSP oil until tender.
Once the onions are translucent, add garlic and saute for about a minute or so to bring out the flavor.
Season with salt and pepper.
Next add tomatoes, tomato sauce, cream cheese and broth and let simmer for 25 minutes, until the vegetables are tender and the flavors have shacked up together.
Taste for seasoning and add more salt, pepper, and the sugar, if needed.

This bisque is amazing! I didn't make the balls of cheese, just the bisque and added croutons. I did add a bit of sugar to balance out the acidity.
Absolutely AWESOME.... it is identical to Houlihans version.... I have tried to make this a couple of times before but it was never as GREAT as this soup is...

I am making this for the second time. This is THE BEST tomato soup ever. I HATE the canned stuff, so when my kids asked for tomato soup, I looked for something similar to Houlihan’s. This is it!!!! The first time I made this, I didn’t think about the fact that hot things in the blender tends to make the lid come off, so this time I sautéed the veggies, puréed with a little stock, and then added the tomatoes to purée before heating all up together. I hope it’s just as good since I’m making a double batch! Thanks for the excellent recipe!

WOW! I made the Mozzarella Balls for a dinner party last weekend. I made them earlier that day and let them cool. I topped my own spicy hot tomato soup with them and they melted beautifully as served.
