  1. Preheat the oven to 375 degrees F and line a baking sheet with parchment.

  2. Place the flour, sugar, baking powder, and salt in the bowl of a food processor, and whisk to combine.

  3. Cut the butter into pieces, and add to the food processor.

  4. Pulse the food processor until the mixture resembles coarse meal.

  5. With the food processor running on low speed, stream in the cream and the vanilla extract.

  6. When the dough has gathered itself into a ball, turn off the food processor and divide the dough into three equal portions.

  7. Flatten each portion of dough into a disc shape, about 1 1/2-inches thick.

  8. Score each disc into 6 triangles with a knife, and pull the triangles slightly away from one another (allowing about 1/2-inch in between).

I love this recipe. I’ve made it several times since I found it last year or the year before. However, the last 2 times I swapped out the vanilla extract for lemon extract. Plus I used the sugar in the raw which has larger crystals than regular sugar and it gives the scones a very nice crunch when you bite into them.  Then for the glaze I used fresh lemon juice instead of milk and lemon zest for the vanilla beans. Amazing!

I’ve making Cream Scones since the early 80’s & this lovely recipe is a keeper!! It’s quick & easy, & I sometimes prep pre-measured dry ingredients the night before,  grab a cold stick of butter & gently work it into the ingredients quickly.  Using only my finger tips before pouring in my cream & vanilla, I mix to combine very gently & turn the dough out onto a lightly floured board. Folding & patting careful not to overwork the dough I creat flaky layers. Cut, egg wash & bake. Depending on the heat of your oven, I beginning closely watching to see they’re not over browning.. Remove from oven and let cool before pouring my delicious  glossy vanilla cream icing!  Perfect every time.  The Easiest & Best ever!
