Instructions

  1. Preheat the oven according to what your pizza dough package suggests.

  2. In a medium frying pan over medium low heat, cook about half of the onions with a splash of olive oil.

  3. Cook for 2 minutes, or until fragrant and soft. You can cook longer and carmelize them, as desired.

  4. Sprinkle sugar over onions, stir and cook for another 2 minutes. Remove from heat. 

  5. In a mixing bowl, stir together pumpkin puree, garlic, onion, thyme, and remaining raw onion until combined. 

  6. Stir in parmesan cheese, salt and pepper until incorporated.

Add variations like peppers, roasted red peppers or tomatoes. 
Make sure to buy canned pumpkin or pumpkin puree and not pumpkin pie filling or it will taste like a pumpkin pie.
