Walnut Date Balls
Walnut date balls have a caramel type sweetness from the dates, a slight coconut whisper and a nice walnut crunch. If you're wanting a hit of some healthy sweetness that's not over the top, these date energy balls fit the bill.

Instructions
Boil enough hot water to cover the dates. Let the dates steep for at least 30 minutes or until the water completley cools off.
Place the dates and the coconut into the food processor. Mix it up until the mixture resembles a paste that sticks together. See notes for extra information.
Add the coconut oil and the vanilla. Mix thoroughly again.

The fresher the ingredients (walnuts, dates, etc) the better your end product.Don't discard the date soaking water, it's wonderful for sweetening your coffee/tea, or even warm milk at night!! If, during processing the date mixture, you find it a bit on the dry side, use the reserved date soaking water to add a bit more moisture to the energy balls. These make great, on-the-go snacks that provide excellent boosts of energy in a healthy way.
